
For most of my recipes I am looking for simplicity. These egg bites are so easy to make and the best part is you can change up the filling based on what you have! I like to make these toward the end of the week if I have any veggies, cheese, or meat that may need to be used up.
For this recipe I used baby Bella mushrooms, red bell pepper, orange bell pepper, cherry tomatoes and shredded cheddar cheese.
Other great options would be mozzarella, basil, and tomato or a sausage and cheddar bite!
These also freeze so well, I portioned 2-3 in a small ziplock bag, you can microwave them for 30-40 seconds (or until warm).


Ingredients
Prep Time: 10 minutes-20 minutes
Cook Time: 20 minutes
9-10 medium/large eggs
1/3 cup of milk
Salt and Pepper to taste
Roasted Garlic powder to taste
Oregano to taste
Diced veggies (1/3 to 1/2 cup each depending on what you are adding)
Sprinkle of shredded cheese per egg bite
Optional: Meat of your choice, some good options could be ground breakfast sausage or bacon.
Method
Mix eggs, milk, and seasonings in a large bowl.
Dice veggies.
Optional: cook meat based on preference, crispy crumbled bacon bits would be delicious!
Grease a standard muffin tin and add veggies and meat to the bottom.
Add egg mixture on top, making sure to leave some room to rise while baking.
Sprinkle cheese on top (if using mozzarella balls place in middle of tin)
Bake at 350 for 20 minutes.
Cool and Enjoy!
